South Tyrol is rich in traditional dishes that originate from rural culture. The Nature Park Hotel Stefaner attaches particular importance to indulging you with seasonal and regional products of the highest quality.
They pay attention to ensure that the ingredients and products are purchased from the surrounding farms, butchers and farmers’ markets. Mr. Villgrattner, depending on availability, buys meats and cheese from the butchers and farmers nearby. Various delicious jams, syrups, strawberries and raspberries are purchased in the Passeier Valley from the Schmiedhof farm or direct from the farms in Cornedo/Gummer and also in Aica di Fiè/Völser Aicha.
In the family gardens, a variety of fresh herbs are harvested, additionally Mr. Villgrattner also collects healthy wild herbs on the surrounding Alpine pastures. Some of the herbs are turned into the finest dishes with great care by the chef himself. With the remaining herbs, Mrs. Villgrattner makes tasty schnapps and grappas. Furthermore, Hotel Stefaner places great emphasis on homemade breads and pastries. So every morning you will be pampered with fresh bread, baked by the local bakery or directly from our oven. The rich breakfast buffet also offers many other delicacies from South Tyrol, such as savory cheese from South Tyrolean dairies or fresh seasonal fruit.
In the evening, after an exciting day of skiing or a memorable hike, Georg Villgrattner cooks up culinary delights for you. Among his specialties are savory herb ravioli and game dishes, and every Friday after a delightful fish menu, a wonderful cheese buffet is served. As a finale, a house-distilled elderberry, walnut or herb schnapps is just the right digestif.
Sustainability plays a major role for the Nature Park Hotel Stefaner. By purchasing local and seasonal products, the Villgrattner family promotes sustainability. Unnecessary transport, which generates greenhouse gas emissions, is thus avoided. In addition, the purchasing of regional products promotes and strengthens the net added value of the country and its economy.
